Cream Collards and Chickpea Curry Salad

Creamy Collards and Chickpea Curry Saladcreamy chickpea, curry, collard salad

This warm salad does just the trick for a cool spring day. You get some good greens and protein to keep you going during the day. This is also a great anti-inflammatory salad and will aid in weight loss. Excellent Middle Eastern flavor in a very short amount of time!

Serves 2

Prep time: 10 min

Cook time: 5 min



  • 8 giant collard green leaves, chopped
  • 1 TBSP coconut oil
  • 2 cups cook chick peas
  • 1 tsp minced garlic or 2 cloves garlic
  • splash rice wine vinegar


  1. Chop collards
  2. Melt coconut oil in pan under med to high heat.
  3. Once melted add garlic, collards and chick peas then splash of vinegar
  4. Sautee for 5 min (until greens have wilted)
  5. Place in bowl and add dressing (below)
  6. Optional:
    1. Add ½ cup cumbled feta cheese
    2. Add 1 cup sliced cooked chicken or turkey
  7. Enjoy!!


Creamy avocado curry dressing: Creamy chickpea, curry and collard salad


  • ½ plain yogurt ( I like greek)
  • ½ avocado
  • ½ tsp sea salt
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp red curry powder
  • 1 tsp garlic powder
  • 2 TBSP water


  1. Place all ingredients in blender
  2. Blend until smooth
